Whisk together flour, sugar, baking powder, and salt.
In separate bowl, beat egg, then add milk, melted butter, and vanilla.
Pour wet ingredients into dry and mix until just combined (lumps are OK!).
Heat greased griddle or pan over medium heat.
Pour 1/4 cup batter for each pancake.
Cook until bubbles form and edges look dry, about 2-3 minutes.
Flip and cook another 2 minutes until golden brown.
Serve with maple syrup, fresh berries, or butter!
